Ingredients for crepes with cream cheese and berries:
225g cream cheese
1/4 cup powdered sugar
1 teaspoon vanilla extract
1 cup strawberries, sliced
1 cup blueberries
1 cup raspberries
1 cup all-purpose flour
2 tablespoons sugar
1/2 teaspoon salt
1 1/2 cups milk
3 eggs
2 tablespoons melted butter
Maple syrup for serving
Instructions :
In a large bowl, whisk together cream cheese, powdered sugar and vanilla extract until smooth.
Add strawberries, blueberries and raspberries and stir to coat with cream cheese. Set aside.
In another large bowl, whisk together flour, sugar and salt.
In a third bowl, whisk together milk, eggs and melted butter.
Add milk mixture to dry ingredients and stir until smooth.
Heat a skillet over medium heat. Lightly grease skillet with melted butter.
Pour about 1/4 cup batter into hot skillet and swirl skillet to spread batter.
Cook crepe until golden brown and firm, about 2 to 3 minutes per side. Repeat with remaining batter.
To serve, top each crepe with cream cheese and berries. Roll up crepes and serve with maple syrup.
